Planning a Christmas menu

We’re scant days away from CookFest 2009 … er, Christmas, and I’ve been compiling a whole mess of recipes to last through the weekend.

Wish I had pictures, but I’ll share those afterward if this all turns out well.

I’ve already got an idea about Shrimp Scampi, we’ll serve my now-perfected baked fish with roasted tomatoes and pesto, we’ll have to work a miracle with a pork loin of some sort, and then on to a frugal Almond Pecan Pie for dessert.

I know we’ll serve wine, but I’m hoping to make VH’s pineapple punch.Ā  Sounds delicious!
Clearly, there’s some fleshing out to do here, but we’ve got a good start.

    Yay! I’m glad I’m not the only one thinking of things to cook for Christmas. This is my first one so I’m kinda at a puzzlation of sorts. šŸ™‚

    Baked fish with tomatoes and pesto sound good. My husband and I are thinking of fish and seafood dishes because we’ve been eating too much red meat lately! I’m leaving the decision up to him but he may make sea bass baked under sea salt and a pasta dish with shrimp or fish ravioli. We haven’t even thought of breakfasts or desserts!

  4. OMG! Shrimp scampi! So beloved! Now that you mention it, think I’ll saute a few frozen shrimp in some garlic and olive oil.

    At Costco the other day M’hijito found a bag of shrimp that were, each one of them, as big a a filet mignon. Now THAT’S scampi.

    Love the baked fish plan, too. Yum!

    @Serendipity: I’m really glad that I’ve had some practice cooking for more than two (thanks to Hawaii), otherwise I’d be really worried about how this is going to turn out. We still need some groceries, though!

    @oilandgarlic: Red meat got vetoed from our menu, too, I was hoping to make a rib roast. Just as well, I’m not sure of my skills with red meat anyway.

    @Mrs. Money: I’m VERY excited to try the punch!

    @Funny About Money: Your Costco shrimp trumps my Costco shrimp. šŸ™‚
