1. We tried a build your own poke bowl bar at a super fancy grocery store when we were out of town and it was So Good. I would absolutely love to spend $20 on a bowl chock full of poke and make some rice to go with it at home – that one bowl made 1.5 meals for us.

We were doing a sort of diy crab sushi bowl thing at home using imitation crab when the weather was warmer. Husband loved it, I liked it, kid generally only wanted to eat the rice and avocado parts. But it’s a colder dish, so I tend to not want it in the mix this time of year.
Tonight is going to be roasted cauliflower soup, made from cauliflower I roasted last night and vegetable broth that’s been prepping in the slow cooker all day. More seasonal for the time.
Oh that’s a good idea too! Our kids are not a unanimous front on avocado but we could manage to satisfy each kid in some way.

Poke bowl for all sounds so yummy! I’m trying to pay attention to protein intake (for the first time ever) and am going to be struggling to find interesting ways to get enough, I think. But a poke bowl would go down VERY easily.
Yes, it really does! I hope it makes its way into both our dinner rotations. I’m trying to figure out how to get prepped poke in reasonable volume. Costco might have it I’ve heard?
