When garden bounty goes too far

That is an absolutely normal size, average, run of the mill pen.Ā  That is a zucchini. Surprisingly, not on ‘roids.Ā  Grown in someone’s backyard, visiting friends brought three of those monstrosities to me and insisted I take them.Ā  1/4 of the fat end made 4 servings of this:

  1. You can grate zucchini and saute–delicious as is, mixed w/ yogurt, many other ways.

    I was thinking the same thing. Zucchini bread can be frozen and stored for a long time.

    Make zucchini-pineapple muffins. Freeze them, too. Then when you want one, pull it out of the freezer and nuke for 20 seconds. Enjoy with tea or coffee šŸ™‚

    They really are very good. Even got my neighbor hooked
